Ingredients:

  • 10 sheets Mr Popiah Green Tea Spring Roll Pastry (7.5 inch)
  • 1 cup grated coconut (fresh or desiccated)
  • ½ cup gula Melaka (palm sugar), melted
  • 1 tbsp water
  • 1 tsp pandan essence
  • 1 egg (for sealing)
  • Oil for frying (optional)

Instructions:

Step 1: Prepare the Coconut Filling

  • In a small pan, combine grated coconut, melted gula Melaka, pandan essence, and water.
  • Cook over low heat, stirring constantly, until the mixture thickens (about 3-4 minutes).
  • Let the mixture cool before using.

 

Step 2: Assemble the Rolls

  • Lay one spring roll pastry sheet flat.
  • Place 1 tablespoon of coconut filling in the center.
  • Fold in the left and right sides, then roll it up tightly.
  • Seal the edges with beaten egg.

 

Step 3: Frying

  • Deep-fry at 170°C (340°F) for 2-3 minutes until golden brown. OR
  • Bake at 180°C for 10-12 minutes for a healthier version.
  • Serve warm as a sweet dessert or snack.

 

💡 Tip: Drizzle with coconut cream or sprinkle with toasted sesame seeds for added texture.
