Ingredients:
- 10 sheets Mr Popiah Green Tea Spring Roll Pastry (7.5 inch)
- 1 cup grated coconut (fresh or desiccated)
- ½ cup gula Melaka (palm sugar), melted
- 1 tbsp water
- 1 tsp pandan essence
- 1 egg (for sealing)
- Oil for frying (optional)
Instructions:
Step 1: Prepare the Coconut Filling
- In a small pan, combine grated coconut, melted gula Melaka, pandan essence, and water.
- Cook over low heat, stirring constantly, until the mixture thickens (about 3-4 minutes).
- Let the mixture cool before using.
Step 2: Assemble the Rolls
- Lay one spring roll pastry sheet flat.
- Place 1 tablespoon of coconut filling in the center.
- Fold in the left and right sides, then roll it up tightly.
- Seal the edges with beaten egg.
Step 3: Frying
- Deep-fry at 170°C (340°F) for 2-3 minutes until golden brown. OR
- Bake at 180°C for 10-12 minutes for a healthier version.
- Serve warm as a sweet dessert or snack.
