CURRY CHICKEN FRIED CHIMICHANGA

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger
  • 1 stalk lemongrass, sliced into 2-3-inch pieces
  • 1-2 tablespoons curry powder (adjust for desired spiciness)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1-2 red chilies, thinly sliced (adjust to taste)
  • 2-3 kaffir lime leaves, torn into pieces
  • 1 tablespoon dried tamarind paste (mixed with 2 tablespoons of water)
  • 400ml coconut milk
  • Salt and sugar to taste
  • Fresh coriander leaves for garnish (optional)

HOW TO

1. Prepare the Base: a. Heat the vegetable oil in a large skillet or pot over medium heat. b. Add the chopped onion and cook until it becomes translucent, usually taking 2-3 minutes. c. Stir in the minced garlic, ginger , lemongrass, and red chilies. Cook for another 2-3 minutes until fragrant.

2. Add Spices: a. Add the curry powder, turmeric, cumin, and coriander. Stir and cook for 1-2 minutes to release the flavors

3. Incorporate Other Ingredients:

a. Add kaffir lime leaves and crushed candlenuts (or macadamia nuts) to the pan. Stir well.

b. Pour in the tamarind paste mixture and mix.

4. Pour Coconut Milk: a. Add the can of coconut milk and bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes until the chicken is cooked through and the sauce thickens. Adjust the consistency with water if needed.

5. Season and Garnish: a. Season with salt and a bit of sugar to balance the flavors. b. Remove the lemongrass stalks and kaffir lime leaves before serving.

6. Fry the Mr. Popiah Chicken Fiesta Chimichanga:

a. Preheat vegetable oil in a deep frying pan or pot to 180°C (350°F).

b. Carefully place the Mr Popiah Chicken Fiesta Chimichanga into the hot oil.

c. Fry for approximately 8-10 minutes, or until it becomes golden brown and crispy. Ensure you turn it occasionally for even cooking.

d. Using a slotted spoon, remove the fried chimichanga from the oil and place it on a plate lined with paper towels to drain excess oil.
